Energy on the Run juice
- 1 small wedge of cabbage (about 4 oz.)
- 2 medium stalks celery
- 1 medium carrot
- ½ large beet
- ½ large red pepper
- ½ lemon, peel and white pith removed
Process all vegetables and citrus fruit through your juice extractor into a juice pitcher. Stir well to blend the flavors. Pour into short cocktail glasses.
To serve, garnish with a small celery stalk.
Makes about 1¾ cups (2 to 3 servings).
